While I love caramel apples, I must admit I always have to eat them with a knife on hand because I can never seem to be able to just take bites out of them. Super frustrating…And while Mini Caramel Apples are really cute (& I even revisited my Mini Caramel Apples recipe in a new post with new tips & tricks), I just don’t have the time or patience to deal with gravity & those little weeping apple balls of caramel mess.

I was inspired by a picture of a sprinkle & chocolate covered apple slice, but when I clicked through it showed a candy apple recipe & the above described picture was no where to be found. I didn’t even bother looking at the recipe, I was pretty upset by the deception. So I decided to fix the situation by doing some caramel apple testing & I was determined to come up with a solution with a little trial & error.

One of the benefits of blogging is that I get to do a lot of testing & experimenting. So luckily I had already learned from my experiences with Mini Caramel Apples that I couldn’t simply cover the apple slices in caramel  because it would weep right off of the exposed apple without setting (read more here). So I decided to test one of the ideas I mentioned in my Mini Caramel Apple’s Revisited post with Ghirardelli Dark Chocolate Melting Wafers (YUM!) & butterscotch chips.

Everything began smoothly. A few of the apple slices I cut a little too thin & the sticks popped out, so just make sure you make your apple slices thicker than your lollipop sticks. The chocolate hardened within a few minutes, but the butterscotch took about 1. I decided to let them sit for an extra hour because I wanted to see if they would weep through & cause the coating to fall off, before I proceeded with the caramel. Plus I needed to run to the store to buy peanuts, sprinkles, & a few other things.

When I got home I noticed a few tiny drops of apple tears from the chocolate dipped apple slices, no big deal. But the butterscotch covered apple slices seemed to be weeping quite a bit more.

I wiped up all the liquid, set to the side the apple slices that were too weepy & falling apart, & proceeded to the caramel step. And that’s when I realized my original plan was not going to work. The first one was my fault, I poured hot caramel on top of my chocolate apple… Majorly bad idea! Seriously, what was I thinking?? So then I popped my apple slices in the freezer for 5 minutes & I let my caramel cool & thicken.

I then tried again with the same results. And you can see in the picture above what I did next. It might not look pretty, but it was delicious! I then decided to do the next best think, drizzle lots of caramel on top of my apple slices.

And guess what? This worked great! So I continued with this caramel process on all of my apple slices & topped them with my favorite toppings.

I even drizzled a few with melted Ghirardelli White Melting Wafers to create a color contrast. So success was mine!

The problem was that it was too late in the afternoon to take correctly lighted pictures & my husband was on his way home & I knew he wouldn’t be able to resist these Caramel Apple Slices. So I quickly made up a few with my too thin apple slices & set them aside for my husband & I for after dinner. I decided to leave my Apple Caramel Slices in the fridge overnight for safekeeping. And I know these Caramel Apple Slices will last overnight & can be made ahead of time (although I recommend making & eating them the same day- note the tips below)! They have now sat on my table for about 2 hours, after having spent the night in my fridge, & while the majority have held up, a few have started to weep, causing pieces of the coating to slide off. So here are 5 suggestions to help ensure perfect Caramel Apple Slices: Cut thick apple slices so the stick stays secure. Approximately 1/2 – 3/4 inch thick works great.

Make sure to pat down the apples to soak up any extra apple juice. Allow some of the Ghirardelli Dark Chocolate Melting Wafers to drip onto the stick, this will act as a sort of edible glue that holds the stick & apple together. Drizzle slightly cooled melted caramel bits on your Caramel Apple Slices so that the chocolate doesn’t melt off. I also recommend that you make them & eat them in the same day. The longer they sit the greater the chance for a weeping caramel apple slice, which will cause the yummy coating to break or slide off in some areas. I’ve decided that these Caramel Apple Slices are the easiest way to enjoy this special fall dessert! Caramel Apple Slices turn out perfectly every time! Caramel Apple Slices are the easiest way to enjoy your favorite treat this fall! Apples. White or Wooden Lollipop Sticks. Melting Chocolate (*1)Caramel.

Toppings - optional. First wash & slice your apples, remove the seeds, insert the stick at the bottom, & pat the apple slices dry. Cover each apple slice in melted chocolate & place on a piece of wax paper to dry. Continue this process until all of your apples are covered in chocolate & have hardened. Then drizzle the caramel & other toppings on top of your apple slices.

Let harden & enjoy! You could alternatively use butterscotch on your thicker slices of apples, but you should be aware that butterscotch does not harden as well as the chocolate & could result in weeping apples & the butterscotch falling off.*2.

These Sliced Caramel Apples can be made the day before & left in your fridge on wax paper until you need them the next day. Just don't forget to note the 5 tips mentioned in my recipe post.
