What to do with Leftover Pulled Pork? A while back I posted a recipe for Slow Cooker Pulled Pork.  It’s been one of my most popular recipes and I make it all the time.  The reason I love it so much is that you can take that simple pulled pork leftover from your crock pot and use it in a multitude of ways.  I’ve gathered up 1. I hope it gives you some ideas for an easy week of cooking! 1) Salad –Pulled pork is just as nice cold (or warm if you wish) over a tossed green salad.  Pair it with a creamy ranch dressing and you can’t go wrong. Take some pork.  Put it in a bun. Eat.  Pairs nice with a traditional coleslaw. See photo up top. Pork n Beans –Heat a can of you fav beans (or make your own if you have that kind of get up and go) and mix in some pulled pork.  Serve over rice. Num!  It’s so simple but it’s a nice way to make your pork go far and it’s surprisingly tasty.  This is great with Corn on the side or even just a nice salad. Enchiladas –Just substitute pulled pork for the chicken in this Enchilada Recipe and you’re golden. Tortilla Bake (lasagne) –This recipe at The Fit Housewife is perfect because it’s vegetarian.  Just add in a layer of pulled pork and bob’s yer uncle.

Pulled Pork Quesadillas –Heat a non- stick frying pan (I don’t use any oil but you could spray some on there if you wish) put one tortilla in the pan, spread some pork over it and sprinkle with cheese.  Add any other veg you want (sauteed peppers, onion whatever) place another tortilla on top and press down with the back of a spatula.  When bottom is crisp, flip and crisp up the other tortilla.  Slice and eat.  TIP: It’s hard to flip a huge quesadilla…use the little ones and you’ll have a much easier time of it 🙂8) Pulled Pork Egg rolls –Using about a cup of pulled pork, mix in finely diced green onion, celery, carrot and about a 1/2 tsp minced garlic and 1/2 tsp soy sauce and a shake of pepper.  Use a fork and mash the mixture up until it’s a fine consistency and well incorporated.  Spoon filling onto egg roll wrappers and roll em up.  Bake or fry until wrapper is crisp and inside is warm.  Serve with your favorite Asian inspired dip. Tacos –Use your favorite soft or hard shelled taco and stuff it with whatever you love.  I like pulled pork, cheese, lettuce, tomato, salsa, green pepper and sometimes a little sour cream. Panini –If you have one of those fancy presses then get it out for your pulled pork.  Fill your bread with pork, cheese and anything else you love in there and you’ll have a delish sandwich.  Why not use pickles and mustard and swiss and go Cuban? Hash –Get out that saute pan and heat it up.  Throw in some shredded potato, some pulled pork, some onion, a bit of corn and let it cook up.  When your potato is crisp you’re done.  Top with a poached egg for breakfast or leave the egg off and melt some cheese on top.  Get creative here…it’s a great way to use up leftovers.

Salt and Pepper to taste. I like some hot sauce, especially if I use an egg!)1. Burrito –Grab a large flour tortilla.  Fill it with pork, brown or black beans, rice, avocado or guacamole if you have it, salsa, cheese.  Roll it up and you’ve got a burrito! Serve with a Jalapeno Popper on the side.

Corn Bread Muffins. Make your favorite mix or try em from scratch.  Pour batter into muffin tin until half full.  Plunk in a table spoon of pulled pork and maybe some cheese if you like. Cover with more muffin batter.  Bake according to directions for muffins. Pot pie –If you’re industrious then make your own pie dough…if not, use the store bought kind or even puff pastry (use according to directions)  In a bowl mix up two cups of pork with a can of corn, a can of black beans, some green chilis (1/2 a can or to taste) cheddar cheese and a tablespoon or two of  softened cream cheese.  Fill your pies.

I sometimes use a ramekin and only use dough to top. Brush tops with a bit of melted butter. Pop in the oven until dough is brown. YUM. 1. 5) Poutine –You don’t have to be Canadian to love this.  Make up a batch of fries (either in the oven or with a fryer) and top em with pulled pork and shredded mozza.  Go over the works with some gravy.  Oh My Heavens it’s good. There you go! Throw some in your crock pot right now and enjoy your pulled pork leftovers over the rest of the week.  Don’t forget – the cooked pork freezes really well.  So portion it out and freeze for easy weeknight meals too!
